Cauliflower Rice Sushi Rolls

 ๐ŸฑOh goodness, such goodness!๐ŸšI’m a big fan of cauliflower rice but I have always had it raw. 

Well, I was playing in the kitchen the other day and thought “what the heck” let’s try cooking some cauliflower rice and see how it comes out.๐Ÿค”

A head of riced cauliflower, a couple tablespoons of avocado oil, 1/4 cup chopped green onion, 2 diced cloves of garlic, and a pinch of sea salt over medium-high heat in a ice sized frying pan for about 8 minutes and I had some amazing rice!โœจ๐Ÿšโœจ

It was great by itself and as a side dish but when I made these avocado rolls I was blown away by the flavor!๐Ÿ™‹๐Ÿฝ

Cooked cauliflower rice is sweet, not as sweet as actual sushi rice but the sweetness of the cauliflower rice with the avocado, nori, a touch of cayenne pepper, and wasabi was a beautiful flavor pairing! ๐Ÿฅ‘๐Ÿš๐ŸŒฟ๐Ÿ’š

Vegan On The Go

๐Ÿฅ— Hello from Anaheim, California!!๐Ÿ™‹๐Ÿฝ My daughter and I took a little road trip today to visit Disneyland and oh gosh we are so excited to spend quality time together and eat homemade vegan yummies!๐ŸŒˆ๐Ÿ‘ญ๐Ÿƒ

Here’s a peek at tonight’s dinner which we enjoyed from our hotel room. It’s a pleasure to share such healthy splendor with my daughter as she is also #hclfvegan and limits her grain intake like her mama!! ๐ŸŽ๐ŸŠ๐Ÿฅ’๐Ÿ‘ญ๐Ÿฅ‘๐ŸŒ๐Ÿ

In preparation for our trip I spent a few hours in the kitchen chopping and mixing flavors together so we could take our food with us๐Ÿš™I’ve discovered that traveling as a grainless, mostly raw vegan can be rather easy and convenient if one plans ahead and can travel with their food.๐Ÿ‘ฉ๐Ÿฝโ€๐Ÿณ๐Ÿ‹๐Ÿƒ๐Ÿ›ฃ

Tonight’s dinner was a homemade raw cashew ‘Vegan Caesar’ salad topped with a raw cauliflower rice tabouli, roasted mushrooms, red bell pepper, and chopped red onion.๐Ÿƒ๐Ÿ‹๐Ÿ„๐Ÿ’œNow off to bed for some sleepy time before our theme park adventures tomorrow!!! ๐Ÿฐ๐Ÿ‘ญ๐ŸŽก๐ŸŽข๐ŸŽ  

Getting My Groove Back


Reflecting on the health struggles I’ve lived with in the past couple of years๐Ÿค”I’ve broken down so many times in the last 2 years with Shingles, fatigue, pain, nausea, anxiety, and just feeling awful, spending days on end in bed. It was very difficult emotionally, I was almost convinced I’d never be able to thrive again. I prayed and cried and hoped for better health, seeking an answer to what was wrong with me and how to heal. 

Well, last December I found Medical Medium and in my desperation dove straight into his plant based dietary protocol and faith filled philosophy.๐ŸŒ๐ŸƒLittle by little, with so many ups and downs, I began to find my vibrance again. 11 months later I feel like I’m back in my groove! 
The last couple weeks has been a testimony to knowing my groove is back! I cannot believe I have been able to keep up with my agenda!๐ŸŒชTo be perfectly honest, I wasn’t sure I’d be able to handle everything I planned for myself in the last 2 weeks! An extra heavy workload, prepping for a solo road trip to Southern California, driving all over the LA area (nearly 1000 miles round trip), visiting with friends, attending a conference, running around Disneyland, never taking a break to rest in all the busyness, then going straight back to work with a full schedule. 
I was actually worried I’d put too much on my agenda and I would break at some point or have to call in sick to work when I came back home. 

But excitedly I never fell apart, I have just kept going! This truly would not have been possible in the last 2 years with all the health struggles that kept holding me back. 

Well, here I am today reflecting on the high capacity I’ve been able to strongly sustain and continue to roll with. If not for the dietary protocol I’ve been on I don’t believe I would be in such a vibrant state. 
Yes, I am still repairing and am very aware of what I need to do to fully heal, so I will continue on this fruit filled, veggie munching, celery juice and lemon water drinking protocol.๐Ÿ’š

Before and After Amazementย 

Feeling the need to make a psoriasis before and after post๐Ÿ˜‰The pic to the left is my right hand in February and the pic to the right is the same hand today.๐Ÿ™€

When I look back at my psoriasis photo journal I am astounded to see where I was compared to where I’m at now.๐Ÿ’๐ŸฝI am still working away from the psoriasis I host as well as shingles, adrenal fatigue, tinnitus, overall fatigue, and brain fog but the difference in my skin and my life today verses where I was at in February is amazing.๐Ÿ™Œ

Through an 80/10/10 raw vegan diet which I began in March I’ve been able to accomplish such clarity in my skin as well as my physical health!๐ŸŽ๐ŸŒ๐Ÿ๐Ÿ‹๐Ÿ‰๐Ÿˆ

This picture does not just represent where I’m at with my skin issues but it also, metaphorically, is a representation of where I’m at with my overall physical and emotional health!๐Ÿ’›So mind blowing how much every part of my life has improved since embarking on this life changing foods journey!!โ˜€๏ธ

Another phenomenon is the color of my skin! I’m actually not sure if it is the lighting in the pics or the mass quantities of plant materials I consume but there is a tremendous difference in my skin tone in these pics!๐Ÿค”Whatever it is that presents such a difference in my skin tone is a mystery to me๐Ÿ‘

Raw Vegan Sushi Joy


Oh for the love of raw vegan maki sushi!!๐Ÿ˜‰Raw cauliflower rice with avocado rolled up in nori! So so so yummy!! 1 small head of cauliflower with 1 tsp fresh ginger and 3 cloves of garlic in the food processor, transfer into a mixing bowl then add a pinch of sea salt, stir, and BAM you have yourself the most bomb cauliflower rice ever!๐Ÿš๐Ÿ’ฃ

Spread some cauliflower rice onto a nori sheet, place your avocado on the bottom of your nori then roll up, slice carefully with a sharp knife, serve with a little OJ and lemon juice mixed with ground mustard, sliced jalapeรฑo, and sea salt, then ENJOY!! 
Meals like this have been my go to for 7 months and my life is forever changed!!๐Ÿ˜I cannot express how joyful I am to have transitioned into eating raw vegan! Searching for the right diet to let go of psoriasis, fatigue, constant nausea, anxiety, and Shingles has been my life mission for years and I have finally cracked the code!!๐Ÿ”“
Oh joy of joy!! The psoriasis I have hosted for 13 years is ALMOST GONE!!โฃ๏ธI just upped my workload again and am cranking out massage clients like I used to!!๐Ÿ’†๐Ÿป๐Ÿ’†๐Ÿฝโ€โ™‚๏ธ๐Ÿ’†๐Ÿผ๐Ÿ’†๐Ÿพโ€โ™‚๏ธ๐Ÿ’†I can’t remember the last time I was nauseous!!๐Ÿ™ŠThe last anxiety attack I had was so long ago!!๐Ÿ™‡๐Ÿฝโ€โ™€๏ธAnd the dreaded numbness and shooting pain from Shingles have not been present for weeks!!๐Ÿ™…๐ŸฝI am so grateful for this process!! 
I do plan on eating raw vegan for 3 months after my psoriasis is gone then I will reintroduce cooked foods.๐ŸฒBut until it is the right time it’s raw vegan all the way for this autoimmune warrior!!๐Ÿ™†๐Ÿฝ๐ŸŽ๐ŸŒ๐Ÿ…๐Ÿ๐Ÿ‹

No Challenge, No Growth

Viewing struggle as negative life experience used to be the norm for me. My new outlook: struggling emotionally, in personal relationships, financially, or with ones physical health can actually be a catalyst to amazing personal growth! 

Believe me, I know struggle and I feel blessed to have lived through so much of it! If not for the hard times I would not have learned about powerful qualities like discernment, trust, setting boundaries, loyalty, experiencing true friendships, when to stand up for myself, or when to walk away. 

Being a young, struggling single mom was one of the greatest life lessons I could have ever lived through. Learning how to be a grown up while concurrently raising a child was awesomely difficult yet taught me almost everything I know about surviving in this world! 

Without struggling with my health I never would have learned about the physical and emotional healing processes, which have given me so much insight on how strong I really am. 

I’m just so grateful for the challenges life has handed me. If not for the tears, the fear, the sleepless nights filled with worry, the heartbreaks, the anxiety, the really really hard parts of life…I wouldn’t be so well versed at problem solving, I wouldn’t know how much wealth I have in family and friendships, or who is truly there for me, I would not have learned about many of my blessings, abilities, and strengths! 

Facing the unknown and the darknesses which life presents can be powerful medicine for creating healthy boundaries for oneself and show you what you are truly capable of! 

So I shall continue to face my fears, walk into the darkness with a blazing fiery torch of self empowerment, look at my adversities as opportunities, and I invite you to join me! Your greatest struggles can be powerful catalysts to knowing your greatest strengths and I believe you deserve to know your most powerful self!
