Vegan Macaroon?? Vegan Macaroon!!!!

Gluten free, vegan macaroon!😋 I did not record the exact measurements as this was the result of me playing in the kitchen.🙈Oh man, I wish I would have recorded my measurements but I was so excited about how it came out I just had to share anyway! 😁 I started with melting about 2 Cups of coconut oil, then added a pinch of sea salt. Followed with half of a dropper full of liquid vanilla stevia and about 3 TBSP of cacao powder. Mixed carefully and efficiently. Then added about 2 Cups of shredded coconut (enough to soak up all the oil). I just left my coconut mixture in the small saute’ pan I used to melt my oil, then put it in the freezer for 5 minutes. The oil hardened up super quick so afterI took it out of the freezer I had to let it sit out of the freezer for at least 5 minutes before I could cut it. This was so good with coffee and as a night time sweet munchie! 😋✌🏽️

Plantain Chips…Yes Please!!!

  
Plantain chips!! Yes please!! 🍌 Super easy! Peel and slice a nicely ripe plantain. I like to use them when they’re yellow.💛 Toss a tablespoon of coconut oil in a frying pan on medium high heat, toss your plantain slices in, add a pinch of sea salt, crisp up your chips, enjoy! So yummy!

Hurray for veggies!! I just LOVE my veggies!! Especially if they’re organic!! The best health choice I’ve ever made was to commit to eating an organic plant based diet. The autoimmune disorder I gracefully live with is called psoriasis and is the reason I began to eat this way. Why? Because when I introduced a plant based diet my physical and mental health improved!!! My autoimmune disorder is linked to all the symptoms I used to live with…I used to ALWAYS be sick. My psoriasis was all over my elbows, hands, knees, shins, on my abdomen, and in my belly button. My fingernails and toenails started falling off. My belly was often bloated and I was nauseous constantly. I was sad a lot, like A LOT. My anxiety was debilitating. I struggled with my weight. I was tired all the time. It really was the pits!!🙈 NOT ANYMORE!!! 🍋🌱🌽🍆🍅🍃 I am in a place in my body and mind I never thought possible. My psoriasis is 95% gone! My nails are stronger and grow faster than ever! NO MORE TUMMY ACHES!!!😄 I’m ridiculously happy every day! I wake up every morning excited for what’s to come! Anxiety is no longer an issue, it’s gone. I am at a weight I’ve always wanted and it’s easy to maintain. This body/mind happy place is where I strive to stay and I will be able to maintain it through continuing to eat my veggies!! I do urge everyone to commit to eating more veggies! Your body and mind will be so much happier!!✨🌱🍃

Carrot Soup To The Rescue

Carrot soup to the rescue!! I found myself laid up today with a yucky head old😷So Im keeping myself locked up at home doing a bit of self care. When my immune system tells me to slow down and pay attention to it, I do my best to honor it. So I allow myself extra rest, drink lots of fluids, and eat extra powerful plant based medicines!! I do not take over the counter medicines, I make my medicine with medicine from our Mother Earth🌱 My hydration of choice for battling this cold is homemade ginger, turmeric, Meyer lemon, Celtic sea salt tea.🍋Today’s heavy duty medicine is carrot-ginger-fennel-turmeric puréed soup topped with hemp seeds. I will be sipping on this soup all day and adding it to my meals. For lunch, I accompanied my soup with avocado I mixed with Braggs Aminos, organic tortilla chips on the side and a Revive Red Kombucha!😋Thank you Mother Earth for providing such nourishment!🌎🙏

Belly and Mental Health

Working on my belly and mental health with prebiotics and probiotics! Did you know in the year 2014 neuroscientists discovered that healthy belly bacteria helps fight depression? Which means a link between creating good bacteria with foods will help stave off scary, scary negative thoughts. What an exciting finding! This info happened to come out after I have been working to build my belly bacteria and I honestly could not be more happy to discover this info and connect it to my personal healing!  I used to live with excruciating sadness, anxiety, mental fatigue, brain fog, feeling out of control, feeling like my world was going to explode, living in fear that I was going to have a major health catastrophe, no motivation to even get out of bed in the morning, facing adversity would spin me into major fear mode. The physical symptoms…tummy aches, nausea, diarrhea, headaches, increased heart rate, numbness in my fingers and toes, not being able to take a deep breath, dizziness, loss of neuromuscular functions, acne, dry skin, psoriasis flare ups, and I was about 50 pounds heavier than I am now. That about sums up my former mental and physical state. I just couldn’t handle the way my mind and body were acting out, so I changed my WHOLE LIFE, starting with diligently researching the best natural mental and nutritional tools I could find. I was simply looking to clear my psoriasis. Come to find out, the tools I needed were nutrition tools and then the added bonus, my mental ease followed. Yes, I worked with movement and mental tools but food was the catalyst to my mental wellness. As soon as I let go of foods which were stripping me of the flora I need to literally survive, I am found healing in ALL aspects of my life. My mind is calm, my body is at ease. Not to say I do not have my dark moments but currently, 99% of the time I can face adversity with grace, I walk into a room full of people and not feel like I need to hide, reactionary behaviors are lessened, I wake up every morning sooooooo happy, I am eager to live my life again. Hot Cacao

Hot cocoa? No…Hot Cacao!☕️I’ve been starting my days off with this AWESOME SUPERFOOD YUMMINESS! Cacao is an ultra superfood containing calcium, magnesium, manganese, iron, fiber, and protein!💪the recipe for this yummy morning pick me up:
2 cups water
1 TBSP cacao powder
1 TBSP almond butter
Pinch of grey salt
1TBSP maple syrup
1/2 tsp vanilla extract
Blend. Pour into a sauce pan an heat. Sip and enjoy!
