Vegan On The Go

πŸ₯— Hello from Anaheim, California!!πŸ™‹πŸ½ My daughter and I took a little road trip today to visit Disneyland and oh gosh we are so excited to spend quality time together and eat homemade vegan yummies!πŸŒˆπŸ‘­πŸƒ

Here’s a peek at tonight’s dinner which we enjoyed from our hotel room. It’s a pleasure to share such healthy splendor with my daughter as she is also #hclfvegan and limits her grain intake like her mama!! 🍎🍊πŸ₯’πŸ‘­πŸ₯‘πŸŒπŸ

In preparation for our trip I spent a few hours in the kitchen chopping and mixing flavors together so we could take our food with usπŸš™I’ve discovered that traveling as a grainless, mostly raw vegan can be rather easy and convenient if one plans ahead and can travel with their food.πŸ‘©πŸ½β€πŸ³πŸ‹πŸƒπŸ›£

Tonight’s dinner was a homemade raw cashew ‘Vegan Caesar’ salad topped with a raw cauliflower rice tabouli, roasted mushrooms, red bell pepper, and chopped red onion.πŸƒπŸ‹πŸ„πŸ’œNow off to bed for some sleepy time before our theme park adventures tomorrow!!! πŸ°πŸ‘­πŸŽ‘πŸŽ’πŸŽ  

Crispy Fried Shrimp

Tonight’s culinary experiment was a success, rather gluttonous and yes, gluten free.πŸ‹πŸ€πŸ€πŸ‹I tossed shelled shrimp in garbanzo bean flour then fried them in safflower oil.πŸ‹πŸ€πŸ€πŸ€πŸ‹Dipping sauce: I mixed 1 TBSP peanut butter, 1 tsp Bragg’s Amino’s, 1 tsp maple syrup, 1 TBSP fresh lemon juice.
I’m a big fan of shrimp for its yummy flavor but also for the healthy benefits. Shrimp is high in selenium, vitamins B12, B6, B3, protein, phosphorus, chloride, copper, and iodine. There are so many health benefits from eating shrimp, it really is a superfood. 🌟πŸ’ͺ🍀🌟

Coconut pumpkin ice cream

Fall is in full effect here in Northern California so why not roast one of our home grown pumpkins and make it into ice cream? πŸŽƒπŸ¨πŸŽƒ
Today’s recipe:
1 medium roasted pumpkin (about 4 cups cooked)
3 cans of Trader Joes lite coconut milk
1 1/2 cups of coconut palm nectar
1 1/2 tsp vanilla extract
1/2 cup of dried shredded coconut
1 cup chocolate chips

Toss all ingredients into your blender or a large bowl and use a hand blender. Blend till smooth. Toss in your ice cream maker till it’s firm. Serve. Enjoy. Yum!
