Vegan On The Go

πŸ₯— Hello from Anaheim, California!!πŸ™‹πŸ½ My daughter and I took a little road trip today to visit Disneyland and oh gosh we are so excited to spend quality time together and eat homemade vegan yummies!πŸŒˆπŸ‘πŸƒ

Here’s a peek at tonight’s dinner which we enjoyed from our hotel room. It’s a pleasure to share such healthy splendor with my daughter as she is also #hclfvegan and limits her grain intake like her mama!! 🍎🍊πŸ₯’πŸ‘πŸ₯‘πŸŒπŸ

In preparation for our trip I spent a few hours in the kitchen chopping and mixing flavors together so we could take our food with usπŸš™I’ve discovered that traveling as a grainless, mostly raw vegan can be rather easy and convenient if one plans ahead and can travel with their food.πŸ‘©πŸ½β€πŸ³πŸ‹πŸƒπŸ›£

Tonight’s dinner was a homemade raw cashew ‘Vegan Caesar’ salad topped with a raw cauliflower rice tabouli, roasted mushrooms, red bell pepper, and chopped red onion.πŸƒπŸ‹πŸ„πŸ’œNow off to bed for some sleepy time before our theme park adventures tomorrow!!! πŸ°πŸ‘πŸŽ‘πŸŽ’πŸŽ

Getting My Groove Back

Reflecting on the health struggles I’ve lived with in the past couple of yearsπŸ€”I’ve broken down so many times in the last 2 years with Shingles, fatigue, pain, nausea, anxiety, and just feeling awful, spending days on end in bed. It was very difficult emotionally, I was almost convinced I’d never be able to thrive again. I prayed and cried and hoped for better health, seeking an answer to what was wrong with me and how to heal.

Well, last December I found Medical Medium and in my desperation dove straight into his plant based dietary protocol and faith filled philosophy.πŸŒπŸƒLittle by little, with so many ups and downs, I began to find my vibrance again. 11 months later I feel like I’m back in my groove!
The last couple weeks has been a testimony to knowing my groove is back! I cannot believe I have been able to keep up with my agenda!πŸŒͺTo be perfectly honest, I wasn’t sure I’d be able to handle everything I planned for myself in the last 2 weeks! An extra heavy workload, prepping for a solo road trip to Southern California, driving all over the LA area (nearly 1000 miles round trip), visiting with friends, attending a conference, running around Disneyland, never taking a break to rest in all the busyness, then going straight back to work with a full schedule.
I was actually worried I’d put too much on my agenda and I would break at some point or have to call in sick to work when I came back home.

But excitedly I never fell apart, I have just kept going! This truly would not have been possible in the last 2 years with all the health struggles that kept holding me back.

Well, here I am today reflecting on the high capacity I’ve been able to strongly sustain and continue to roll with. If not for the dietary protocol I’ve been on I don’t believe I would be in such a vibrant state.
Yes, I am still repairing and am very aware of what I need to do to fully heal, so I will continue on this fruit filled, veggie munching, celery juice and lemon water drinking protocol.πŸ’š
Thanks to all who have supported me in my healing journey and (I will say it again and again) thank you Medical Medium for delivering your message!πŸ™Œ

Raw Vegan Sushi Joy

Oh for the love of raw vegan maki sushi!!πŸ˜‰Raw cauliflower rice with avocado rolled up in nori! So so so yummy!! 1 small head of cauliflower with 1 tsp fresh ginger and 3 cloves of garlic in the food processor, transfer into a mixing bowl then add a pinch of sea salt, stir, and BAM you have yourself the most bomb cauliflower rice ever!πŸšπŸ’£

Spread some cauliflower rice onto a nori sheet, place your avocado on the bottom of your nori then roll up, slice carefully with a sharp knife, serve with a little OJ and lemon juice mixed with ground mustard, sliced jalapeΓ±o, and sea salt, then ENJOY!!
Meals like this have been my go to for 7 months and my life is forever changed!!😍I cannot express how joyful I am to have transitioned into eating raw vegan! Searching for the right diet to let go of psoriasis, fatigue, constant nausea, anxiety, and Shingles has been my life mission for years and I have finally cracked the code!!πŸ”“

For The Love of Strawberries πŸ™‹πŸ½πŸ’•πŸ“

πŸ’•πŸ’›After having an incredible heart connection with a fellow autoimmune blogger I was compelled to make this post.πŸ’•πŸ’›

πŸ™‹πŸ½βœ¨ I love strawberries!! I never imagined healing myself would be this yummy! I gave up strawberries for quite a while as I was seeking the correct nutritional recipe to diffuse the constant inflammation I was hosting due to my autoimmune diseaseπŸ™ˆ Strawberries are in the Night Shade Family, as well tomatoes, eggplant, potatoes, and peppers are in the same familyπŸ…πŸ†πŸ πŸŒΆ Nightshades have received a bad reputation as being inflammatory foods, so during most of 2015 I tried to eliminate all Nightshades to help alleviate the constant inflammation my body was hosting. Oh how I agonized over letting go of such yummy foodsπŸ˜• But I was willing to do anything but take pharmaceuticals or consume meat to heal my body. My illness seemed to be getting worse as I was implementing conventional autoimmune nutritional protocols. As I eliminated and implemented certain foods to find healing I concurrently began praying, calling upon Angels, and seeking deeper inner guidance to receive answers Medical Science does not yet have for me. I warily and solemnly continued my journey, seeking answers from medical science, my research, my body, my spirit, and my spirit guides. In late November 2015 I saw a post by @organic_olivia about @medicalmedium πŸ™ I was so desperate for answers I ordered the book instantly. My hard copy of Medical Medium showed up in the mail on December 2nd, 2015. πŸ“–When the book arrived I could not put it down and I went out that evening to grab myself mass quantities of fruits and veggies, Nightshades included.πŸŒπŸ…πŸ’πŸ“πŸŠπŸŽπŸ‹πŸˆ Six months later, here I am. Healing, repairing, and renewing all thanks to plant medicine, spirit medicine, and spirit guides. Praise Spirit! Praise my tribe of support! Praise Organic Olivia! Praise Medical Medium! Praise Gaia and the gifts she provides for absolute healing!! With eternal gratitude I surrender even furtherπŸŒŸπŸ™ŒπŸŒŸ

Veggie Goodness

πŸŒΏπŸ…πŸŒ±πŸŒΆβ˜˜πŸ‹  Avocado, cherry tomatoes, jalapeΓ±o, red bell pepper, clover sprouts, and seaweed! I squeezed fresh Meyer lemon juice over my veggies and sprinkled them with and little Celtic Sea Salt and cayenne pepper. This beautiful collection of veggie goodness is great for breakfast, lunch, dinner, or snack time.

Healing My Neurological Fatigue

πŸ’•πŸ™‹πŸ½Snacks for healing my Neurological Fatigue πŸŒ±πŸ’œπŸŠπŸŽ Celery, purple carrots, navel oranges, pink lady apple slices. After listening to the Medical Medium podcast on Neurological Fatigue I implemented even more celery and fruit pairings into my diet throughout my days. As Anthony William, author of Medical Medium says, our brain and nerve tissues need salt and sugar to function correctly. The salts from plant materials are needed for proper neurological functions. Celery is a very salty veggie, it is full of mineral salts which combined with the fructose and glucose from fruits and certain veggies can calm our inflamed brain and nerve tissues. I had Shingles, an indicator for Neurological Fatigue, so this yummy fruit and veggie combo is great for calming my nervous system. Thank you Anthony William for this brilliant info!πŸ™ As I continue further into this to this journey my symptoms continue to lighten up and I am getting my life back! So grateful!!πŸ™Œ
