🍱Oh goodness, such goodness!🍚I’m a big fan of cauliflower rice but I have always had it raw.
Well, I was playing in the kitchen the other day and thought “what the heck” let’s try cooking some cauliflower rice and see how it comes out.🤔
A head of riced cauliflower, a couple tablespoons of avocado oil, 1/4 cup chopped green onion, 2 diced cloves of garlic, and a pinch of sea salt over medium-high heat in a ice sized frying pan for about 8 minutes and I had some amazing rice!✨🍚✨
It was great by itself and as a side dish but when I made these avocado rolls I was blown away by the flavor!🙋🏽
Cooked cauliflower rice is sweet, not as sweet as actual sushi rice but the sweetness of the cauliflower rice with the avocado, nori, a touch of cayenne pepper, and wasabi was a beautiful flavor pairing! 🥑🍚🌿💚
🥗 Hello from Anaheim, California!!🙋🏽 My daughter and I took a little road trip today to visit Disneyland and oh gosh we are so excited to spend quality time together and eat homemade vegan yummies!🌈👭🍃
Here’s a peek at tonight’s dinner which we enjoyed from our hotel room. It’s a pleasure to share such healthy splendor with my daughter as she is also #hclfvegan and limits her grain intake like her mama!! 🍎🍊🥒👭🥑🍌🍍
In preparation for our trip I spent a few hours in the kitchen chopping and mixing flavors together so we could take our food with us🚙I’ve discovered that traveling as a grainless, mostly raw vegan can be rather easy and convenient if one plans ahead and can travel with their food.👩🏽🍳🍋🍃🛣
Tonight’s dinner was a homemade raw cashew ‘Vegan Caesar’ salad topped with a raw cauliflower rice tabouli, roasted mushrooms, red bell pepper, and chopped red onion.🍃🍋🍄💜Now off to bed for some sleepy time before our theme park adventures tomorrow!!! 🏰👭🎡🎢🎠
Reflecting on the health struggles I’ve lived with in the past couple of years🤔I’ve broken down so many times in the last 2 years with Shingles, fatigue, pain, nausea, anxiety, and just feeling awful, spending days on end in bed. It was very difficult emotionally, I was almost convinced I’d never be able to thrive again. I prayed and cried and hoped for better health, seeking an answer to what was wrong with me and how to heal.
Well, last December I found Medical Medium and in my desperation dove straight into his plant based dietary protocol and faith filled philosophy.🍌🍃Little by little, with so many ups and downs, I began to find my vibrance again. 11 months later I feel like I’m back in my groove!
The last couple weeks has been a testimony to knowing my groove is back! I cannot believe I have been able to keep up with my agenda!🌪To be perfectly honest, I wasn’t sure I’d be able to handle everything I planned for myself in the last 2 weeks! An extra heavy workload, prepping for a solo road trip to Southern California, driving all over the LA area (nearly 1000 miles round trip), visiting with friends, attending a conference, running around Disneyland, never taking a break to rest in all the busyness, then going straight back to work with a full schedule.
I was actually worried I’d put too much on my agenda and I would break at some point or have to call in sick to work when I came back home.
But excitedly I never fell apart, I have just kept going! This truly would not have been possible in the last 2 years with all the health struggles that kept holding me back.
Well, here I am today reflecting on the high capacity I’ve been able to strongly sustain and continue to roll with. If not for the dietary protocol I’ve been on I don’t believe I would be in such a vibrant state.
Yes, I am still repairing and am very aware of what I need to do to fully heal, so I will continue on this fruit filled, veggie munching, celery juice and lemon water drinking protocol.💚

Feeling the need to make a psoriasis before and after post😉The pic to the left is my right hand in February and the pic to the right is the same hand today.🙀
When I look back at my psoriasis photo journal I am astounded to see where I was compared to where I’m at now.💁🏽I am still working away from the psoriasis I host as well as shingles, adrenal fatigue, tinnitus, overall fatigue, and brain fog but the difference in my skin and my life today verses where I was at in February is amazing.🙌
Through an 80/10/10 raw vegan diet which I began in March I’ve been able to accomplish such clarity in my skin as well as my physical health!🍎🍌🍍🍋🍉🍈
This picture does not just represent where I’m at with my skin issues but it also, metaphorically, is a representation of where I’m at with my overall physical and emotional health!💛So mind blowing how much every part of my life has improved since embarking on this life changing foods journey!!☀️
Another phenomenon is the color of my skin! I’m actually not sure if it is the lighting in the pics or the mass quantities of plant materials I consume but there is a tremendous difference in my skin tone in these pics!🤔Whatever it is that presents such a difference in my skin tone is a mystery to me👐

Oh for the love of raw vegan maki sushi!!😉Raw cauliflower rice with avocado rolled up in nori! So so so yummy!! 1 small head of cauliflower with 1 tsp fresh ginger and 3 cloves of garlic in the food processor, transfer into a mixing bowl then add a pinch of sea salt, stir, and BAM you have yourself the most bomb cauliflower rice ever!🍚💣
Spread some cauliflower rice onto a nori sheet, place your avocado on the bottom of your nori then roll up, slice carefully with a sharp knife, serve with a little OJ and lemon juice mixed with ground mustard, sliced jalapeño, and sea salt, then ENJOY!!
Meals like this have been my go to for 7 months and my life is forever changed!!😍I cannot express how joyful I am to have transitioned into eating raw vegan! Searching for the right diet to let go of psoriasis, fatigue, constant nausea, anxiety, and Shingles has been my life mission for years and I have finally cracked the code!!🔓
Oh joy of joy!! The psoriasis I have hosted for 13 years is ALMOST GONE!!❣️I just upped my workload again and am cranking out massage clients like I used to!!💆🏻💆🏽♂️💆🏼💆🏾♂️💆I can’t remember the last time I was nauseous!!🙊The last anxiety attack I had was so long ago!!🙇🏽♀️And the dreaded numbness and shooting pain from Shingles have not been present for weeks!!🙅🏽I am so grateful for this process!!
I do plan on eating raw vegan for 3 months after my psoriasis is gone then I will reintroduce cooked foods.🍲But until it is the right time it’s raw vegan all the way for this autoimmune warrior!!🙆🏽🍎🍌🍅🍍🍋

🙋🏽✨ I love strawberries!! I never imagined healing myself would be this yummy! I gave up strawberries for quite a while as I was seeking the correct nutritional recipe to diffuse the constant inflammation I was hosting due to my autoimmune disease🙈 Strawberries are in the Night Shade Family, as well tomatoes, eggplant, potatoes, and peppers are in the same family🍅🍆🍠🌶 Nightshades have received a bad reputation as being inflammatory foods, so during most of 2015 I tried to eliminate all Nightshades to help alleviate the constant inflammation my body was hosting. Oh how I agonized over letting go of such yummy foods😕 But I was willing to do anything but take pharmaceuticals or consume meat to heal my body. My illness seemed to be getting worse as I was implementing conventional autoimmune nutritional protocols.
